CHILLERS

  • All carcasses are inspected by trained Vets for approval
  • Approved carcasses are moved to chillers holding for optimum time maintained at 0-40 degrees ensuring PH value to reduce between 5.5/6.0.
  • Chillers at KenMeat have the capacity to store 3500 Goats/Sheep and 300 Beef Carcasses.

BEEF AND SHEEP/GOAT CARCASSES IN CHILLERS

  • Processing is done in un-indirection so as to prevent cross-contamination.
  • All equipment in the processing is made of SS304/ SS316 stainless steel.
  • Deboning for beef meat is done in hygienic halls maintained at less than 15 degrees; to ensure high quality of meat products throughout the process.
  • Vacuum machines are in place to produce vacuum-packed meat.
  • Processing including fresh packing area and frozen packing area, is done in hygienic halls maintained at less than 15 degrees’ temperature; to ensure high quality of meat products throughout the process.

BEEF AND SHEEP/GOAT CARCASSES IN CHILLERS

  • KenMeat processing plant has the capacity to handle frozen products of 600 MT per month.
  • Four blast freezers, three cold rooms(Freezers) and eight chillers handle these quantities in cyclic production.
  • Four Col Stores with a total capacity 400MT of frozen carcass and cuts.
  • Storage is done on Food Grade pallets at all times.
  • Dispatch is very early the next to cold stores for fast loading and reduces any temperature loss.

STORAGE AND DISPATCH

  • Chilled or Frozen carcasses/cuts are moved batch-wise.
  • In house, Preliminary inspection of the carcass done before the date of dispatch is finalized.
